Wheat: Mix the egg whites with a pinch of salt, gradually add the sugar. Add flour mixed with ground walnuts, mix with a spatula with light movements. Pour the composition in a tray lined with baking paper, put it in the preheated oven until lightly browned. Repeat the same with the other 2 sheets.

Vanilla cream: heat the milk in a saucepan, meanwhile mix the yolks with the sugar and starch. Gradually add the warm milk, stirring constantly, pour the composition back into the pan and put on the fire until it thickens. Take the pan off the heat and add the butter mixed beforehand, the vanilla essence and mix well, cover with cling film and let it cool.

Krantz: Put the sugar in a saucepan and when it has caramelized, add the almonds, mix and pour on an aluminum foil. We let it cool and then chop it finely.

Cream of whipped cream: mix the sour cream with the sugar until a fluffy composition results, add half of the krantz and mix

Assembly: place the first sheet on a plate, add a quarter of the vanilla cream, a quarter of the whipped cream and repeat with the other sheets.

Grease the top with whipped cream and cover with the remaining cranberry
