Halloween Eyeballs Easy Halloween Cupcakes

Description

This Halloween Eyeballs Easy Halloween Cupcakes recipe uses a cake mix as a base and creates a fun and easy eyeball topping that is both spooky and delicious!

Ingredients

For the cupcakes

  • 1 ¼ cup all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • Pinch salt
  • 2 large eggs, room temperature
  • Sugar cup sugar
  • ½ cup vegetable oil
  • ½ cup buttermilk

For the buttercream

To decorate

  • 5 & ​​# 8211 6 oz. white fondant
  • Green gel icing
  • 1 & # 8211 2 oz. black fondant
  • Red edible marker

Instructions

Cupcakes

  1. Line a tin muffin with paper cupcake liners and set aside.
  2. Preheat oven to 350 degrees F.
  3. Sift together all dry ingredients: flour, baking powder, baking soda and salt.
  4. In a separate bowl, whisk together eggs, sugar and vegetable oil.
  5. In thirds, add dry ingredients into wet ingredients, alternating with buttermilk.
  6. Once batter is formed, scoop into lined muffin tin, filling each section about 2/3 of the way.
  7. Bake for 15 to 18 minutes.
  8. Allow to cool before decorating.

Buttercream

  1. To prepare the buttercream, use an electric mixer to beat all ingredients together. Start on low and the gradually increase to high.
  2. Once all ingredients are well-combined and form semi-stiff peaks, use an offset spatula to frost a thin layer of buttercream on each cupcake.

Fondant and Decorating Cupcakes

  1. With a rolling pin, roll out white fondant until it’s about ¼ of an inch thick.
  2. Using a circular cookie cutter, about 2.5 inches in diameter, cut out 12 fondant circles.
  3. Press one circle on each cupcake.
  4. Frost a circle of green gel icing on the center of each covered cupcake.
  5. Roll out 12 black fondant spheres, about 1/3 of an inch in size. Flatten each one slightly.
  6. Place one fondant sphere in the center of the green portion of the eye.
  7. Using the red marker, draw random lines on the white portion of the cupcake.
  8. Serve and enjoy!

Can I use a cake mix?

Of course you can, feel free to use your favorite cake recipe or to make it even easier a cake mix of your choice! They are easy to make and even though I made these from scratch and they are tasty, a red velvet cupcake mix for these Halloween Eyeballs Cupcakes is in my opinion also a great choice! Can you freeze the cupcakes?

Of course you can, up to 2-3 days ahead of time unless you're wanting to freeze them, then you can do it farther ahead. However, I recommend making the fondant in advance (if you don't want to do it all in the same day) as fondant can be frozen for a long time. You can make the white circles of the fondant and put parchment paper in between to freeze them as well as the & # 8220black pupils & # 8221. This will give you less to do on the day you & # 8217re making the Halloween Eyeballs Cupcakes.

If you would have walked into the room while I was making these Halloween treats you would have seen a big toothy grin on my face and my eyes as big as the moon. I was having so much fun creating these cupcakes that I even let out a little howl.

I was having such a good time that I decided to make two versions of these Reese & # 8217s Cup Werewolf Cupcakes.

Some are furry and some are smooth. The furry ones take just a little bit more time to create than the plain ones, but both are equally cute.

One of the easiest recipes to prepare for Halloween night is cakes.. I've already taught you how to make some fun owl cupcakes for this terrifying night, but today I want to go one step further and give you some little ideas to decorate your own Halloween cupcakes.

The recipe we will use to make our cupcakes will be chocolate, much sweeter for the little ones.

Preparation

Sift the flour with cocoa and yeast and leave everything in a well-mixed bowl.
In another container, beat the butter with the sugar until everything is integrated. Add the eggs and beat until incorporated and add half of the flour, cocoa and yeast mixture we have prepared.
Then we put the milk mixed with the vanilla extract and the rest of the flour mixture. With the help of some rods, let the mixture be completely homogeneous and incorporate the white chocolate chips, which will be the surprise of filling our cupcakes.

I spread the mixture on about 12 forms, without filling them more than half. Bake with the oven set to preheat 180 degrees for 20 minutes, or until we insert a toothpick into the dough, and it comes out clean.

Let the cupcakes cool on a shelf so that when they cool we can decorate them.
