If you knead and leaven the dough in the bread machine (like me), put all the ingredients in the following order in the bread machine: warm milk, egg, melted butter, sugar, sifted flour, yeast and salt. The program of my bread machine is one hour and 15 minutes (time in which it kneaded and leavened).

If you want to knead the dough by hand, first prepare the yeast mayonnaise, ½ teaspoon of sugar, 50 ml of warm milk, 5 tablespoons of flour. Let it rise for 20 minutes, warm.

Sift the flour into a bowl and add in its center the lightly beaten egg with a fork, the ground sugar, the slightly warm milk, the salt and the soft butter. Knead until the dough becomes elastic and no longer sticks to your hands.

Cover the bowl with food-grade plastic wrap and leave the dough to rise for 90 minutes, in a place away from cold air currents. After the dough has risen enough, knead a little and divide it into 2 pieces.

Meanwhile, peel the potatoes, cut them into slices and boil them. Let them cool a bit and puree them. Put the telemeau on the small grater and add the mashed potatoes, finely chopped parsley and dill, beaten eggs and mix until the composition is homogeneous. Add salt and pepper to taste.

Spread a sheet of dough and transfer it to the baking tray lined with baking paper. Cut the dough with a lid / bowl / plate with a diameter of 28cm. Pour the composition with the telemea on top.

Spread the second sheet of dough, with a diameter of at least 34 cm and place it over the composition, and put the edges under the other sheet of dough.

Put the tray in the preheated oven, at 180 degrees C, for 40-45 minutes, until it browns nicely.

Let the pie cool a bit and serve.

Tart or quiche with spinach and Telemea cheese - a very tasty appetizer tart and very easy to prepare, especially because you no longer have to knead the tart dough, it is replaced by a top of boiled potatoes.
This tart can be served both as an appetizer, but also as a main course, and the filling can be made with mushrooms, bacon, cheese, leeks or any other combination you like.

- 4 larger potatoes
- 2 tablespoons oatmeal
- 3 tablespoons yogurt
- 500 gr. boiled spinach
- 250-300 gr. fresh cow's milk
- 3 eggs

Wash the potatoes, peel them and let them cool. After they have cooled, peel them and grate them. Over 3/4 of the grated potatoes add 2 tablespoons of oatmeal, 3 tablespoons of yogurt / sour cream, a pinch of salt and mix well to obtain a homogeneous composition.
The potato composition is spread in a tart pan previously greased with butter, so as to take the shape of a tart top.

The composition with which we fill the quiche is made of chopped boiled spinach, slightly hardened in a saucepan, over which is added the ground beef crushed with a fork.
After filling the tart with the spinach and cheese composition, sprinkle the rest of the grated potatoes and beaten eggs on top.
Bake in the oven for about 30-40 minutes and serve hot.

Preparation Georgian cheese pie:

In a bowl mix the dry yeast with the sugar and a few tablespoons of flour (3-4 tablespoons are enough). Stirring continuously, pour the warm milk, until the composition is homogenous and the yeast dissolves. Leave to rise for 10-15 minutes.

Separately, in another bowl mix the flour with the salt, then make a hole in the middle of the flour. Pour the mayonnaise, oil and lightly beaten egg and start kneading. We will get a slightly soft and slightly sticky dough.

Put the dough in a bowl greased with oil, cover with cling film and leave to rise until it doubles in volume. Then turn it over on the lightly floured table and divide it into 2 equal parts.

Depending on the cheese used, crush it with a fork or grate it. Add salt and pepper to taste and a green onion.

How to make Georgian cheese pie:

The dough is spread in a sheet about 0.5 cm thick. Sprinkle the cheese filling, then gather the edges of the dough, forming a ball. The formed ball is then stretched with the twister, to the size of the tray used (20/25 cm). Place in a tray lined with baking paper. Sprinkle with grated cheese, in abundance.

Proceed exactly with the second piece of dough.

Bake in the oven at 200 degrees for about 20 minutes, until nicely browned on top.

This pie contains few ingredients and I can assure you that it is delicious. I know it sounds strange tuna pie.

The inspiration came to me buying a pie, namely & # 8222empanada con atún & # 8222 which I thought was good, but it seemed to be missing something to be delicious, so I prepared this pie, which I hope you prepare and be to taste. your.

For starters, we prepared a tart dough (which you can also buy from the supermarket, but I suggest you make it yourself)

-100g butter (cold directly from the refrigerator)

Mix the butter well with the flour, the salt powder, then add the egg and in case you don't have a consistency, add a little water.

Once you have the dough ready, let it cool.

Peel the carrots, wash them and boil them in water and a pinch of salt. When they are cooked, take them out, let them cool, then cut them into cubes.
Heat the oil in a saucepan, add the sliced ​​leeks and let it soften. Sprinkle with a pinch of salt. After it softens, add the diced peppers and let them cook for 1-2 minutes. Add the boiled carrot, mix well and set aside the pan to cool the composition. When it cools, put the leek composition in a bowl and add the beaten egg with a fork and crushed cheese. Mix with a spoon, season with ground pepper, and add chopped dill. Incorporate flour mixed with baking soda and baking powder. We have to come up with a composition that doesn't flow.
Put the composition in a small cake tin (25x8x5 cm) lined with baking paper and put it in the preheated oven over medium heat for 30-35 minutes, or until nicely browned. Let the cake cool in the form, then take it out, slice it and serve. Simple and good!

Today I wanted to make two pie variants in one. Usually I found very good pies at the supermarket - one with spinach and the other with telemea. They are made by a Greek company and only put in the oven. Of course I don't like to eat frozen food but sometimes I ended up in this situation and this pie was one of the happy variants of semi-prepared food.

But I also wanted to try the 'home' version. I had pie sheets in the freezer. I thawed them and greased a dish of embarrassment with a little oil. I superimposed two sheets on the cross, which I then greased with oil. I had scalded the spinach earlier, strained it and chopped it and then placed it over the pie sheet. For those who do not have time, go with spinach from the jar (washed and chopped). I put a few pieces of butter on top, grated the cheese, beat 1 egg and poured it on top and covered with the remaining pie sheet. Then, because I had a few more sheets, I sprinkled a little more oil, I placed another row of sheets (like the first time) and I grated the rest of the cheese, I added 1 more beaten egg and I closed the second row of sheets of pie. I greased the sheet with oil on top and put it in the oven for about 30 minutes at 180-200 degrees. When it browns, close the oven.

The result was a pie in two layers - spinach and telemea - good and light.
