  1. Whisk the cream to form soft peaks and gently fold in the custard.
  2. Arrange the crushed biscuits in even layers in the base of a round serving dish, top with custard, cover for and refrigerate for 3 hours or overnight
  3. When ready to serve, top with the sliced bananas and toffee sauce

Liam Charles’ recipe for New Year’s Eve banoffee trifle

L et’s set the scene: you’re hosting a New Year’s Eve party. You still have hours until the big countdown begins, but you’ve forgotten to make a dessert. Never fear: there’s hardly any cooking involved in this banoffee trifle, and it’s all about the celebration – just stick a few sparklers in it and get back to the party. Have an easy, happy new year.

Serves 12

For the toffee sauce
150ml double cream
40g unsalted butter
50g light muscovado sugar
¼ tsp fine sea salt

For the brittle
230g caster sugar
20g unsalted butter
150g mixed nuts
, roughly chopped

For the trifle
600g extra-thick double cream
100ml Baileys
400g chocolate digestives, broken
5 large bananas, peeled and sliced
2 x 500g ready-made vanilla custard

To finish
75g dark chocolate, grated

Melt the cream, butter and sugar in a medium-sized saucepan, then leave it to bubble and turn a toffee sauce-like colour. Add the salt to taste, and set aside.

Put four tablespoons of water into a saucepan and slowly add the caster sugar, stirring with a whisk or spatula, until combined. Cook over a medium heat until the sugar turns a deep amber colour. Remove the pan from the heat and quickly stir in the butter. Tip in the nuts and stir until they’re well-coated in the sugar.

Carefully pour the sugary nuts on to a silicone mat or a tray lined with baking paper and leave to cool. Once cool, smash into shards.

Mix the cream with three tablespoons of Baileys and set aside. Divide the broken biscuits over the bottom of a large dish. Drizzle more Baileys over the biscuits, top with the sliced banana, custard and Baileys-infused cream. Squiggle over some caramel sauce and finish with grated chocolate. Pop in the fridge until needed. When ready to serve, top with shards of brittle (and some sparklers).


Banoffee Pie

Banoffee pie is a traditional British dessert that is prepared with bananas, cream and toffee, combined with a short pastry or a base made from crumbled biscuits and butter.

Its name, which was originally spelled “banoffi”, is a portmanteau combining the words “banana” and “toffee”, just like the Uruguayan choripan (chorizo and pan) or the Costa Rican chifrijo (chicharrones and frijoles).

What is the origin of the banoffee pie?

The banoffee pie was created in 1971 by Nigel Mackenzie, the owner of The Hungry Monk Restaurant in Jevington, East Sussex, and his chef, Ian Dowding.

The original recipe was based on an American dessert recipe called “Blum’s Coffee Toffee Pie” from the Blum’s Bakery in San Francisco.

The American cake did not include any fruits, but Mackenzie and Dowding decided to improve the recipe by testing apple and mandarin orange. However, the ultimate combination that seemed to work perfectly included banana.

Their recipe had a shortcrust pastry base. However, the recipe has evolved since, and is now mostly prepared with a crust composed of crumbled biscuits and butter, much to the regret of their inventors. However, the biscuit base has become popular for a reason. Unlike the original shortcrust base, it doesn’t get soggy at the bottom after just a few hours, and therefore keeps fresh longer.

Another pet peeve of his inventors is the use of aerosol cream when the original recipe calls for lightly coffee-flavored whipped cream.

Mackenzie came up with the name “banoffi pie” as a temporary name, but the name stuck. The dessert was so popular that although it was supposed to be offered for a limited time, it was never taken off the menu.

The success of the banoffee pie

The recipe started to appear in the Oxford English Dictionary in 1997 as “A pie or tart made with toffee, bananas, and cream” but the banoffee is so popular that the word even made it to the English language to describe any food that tastes or smells both banana and toffee.

A few years after its creation, it was rumored to be served to the Prime Minister and at Buckingham Palace.

The banoffee pie recipe often appears as one of the recipes printed on cans of Nestlé’s sweetened condensed milk.

The recipe was eventually published in The Deeper Secrets of the Hungry Monk in 1974, and later reprinted in the 1997 cookbook In Heaven with The Hungry Monk.

What is the origin of the Blum’s coffee toffee pie?

Blum’s coffee toffee pie is the pie that inspired Mackenzie and Dowding to create the banoffee pie. This pie was served at the long-closed Blum’s bakery and restaurants, in San Francisco.

The bakery was also home to the legendary coffee crunch cake. The cake was composed of light sponge cake layers that were smothered in coffee-flavored whipped cream, and garnished with broken hard candy.

The combination of smooth and crunchy textures, along with the contrast of the light lemon and vanilla flavor with the bittersweet coffee whipped cream, made it a sensational success.

From the 1940s through the 1960s, people came to the flagship bakery on Union Square to taste sandwiches, fountain drinks, handmade candies as well as popular desserts such as the coffee toffee pie and the coffee crunch cake.

The coffee crunch cake was actually created by accident. Indeed, the cake that was originally spelled Koffee Krunch Kake (maybe not the best acronym), was invented by master baker Ernest Weil in the 1940s.

As one of the employees overcooked what was supposed to be soft coffee candy, Weil smashed the hard substance and broke it into pieces. He eventually reused the pieces to decorate a sponge cake with whipped cream frosting. The cake was such a huge hit that it became a staple of Blum’s bakery and restaurants.

Along with the sticky toffee pudding, this banoffee pie, which was also created in the second half of the 20th century, has become a classic British dessert, just as popular as the older and more traditional trifle.

I had the opportunity to try banoffee pie at restaurants around the world, including a few in England and Ireland, and I am never disappointed. This was the first time I made it at home… and it was such a hit that I made it a second time, perfecting the recipe a little more by adjusting for a thicker texture of the toffee.

This no-bake banoffee pie recipe is very easy to make and will surely be a success with your gourmand friends and family.


Line the base of a deep 20cm/8in spring form tin with baking paper.

To make the base, crush the biscuits to fine crumbs and melt the butter over a low heat. Pour into a bowl and mix to combine. Spoon into the base of the tin and press down with the back of a spoon until level. Place in the fridge for 15 minutes.

To make the filling, heat the butter and sugar in a small non-stick saucepan and stir over a low heat until combined. Add the condensed milk and bring to the boil, stirring for 2–3 minutes – do not over-boil or it will become grainy and fudge-like. Add the vanilla and pour into the tin. Place in the fridge for at least 1 hour.

Whip the cream in a bowl until soft peaks form.

Arrange the banana slices in neat rounds on top of the toffee. Spoon or pipe the cream on top and level. Set in the fridge for an hour.

Remove from the tin, and zig zag the melted chocolate over the top or dust with cocoa powder.

Recipe Tips

You could use 1 x 397g tin of dulce de leche caramel instead of the toffee filling and skip step 3. Add a teaspoon of sea salt to make a salted caramel version. This recipe will also make 8 x 7cm/2in rings to make individual pies. The base and toffee can be prepared up to a day ahead and left in the fridge. Assemble with the banana and cream ideally on the day. Not suitable for freezing.


Method

First of all make the butterscotch sauce, and to do this place the golden syrup, butter and sugars in a small saucepan.

Then place over a gentle heat and allow to slowly melt and dissolve, giving it a stir from time to time, which will take 5-7 minutes. Let it continue to cook for about 5 minutes, then gradually stir in the double cream and vanilla extract until well combined. After that, let it cool. While it's cooling, make the custard. To assemble the trifle, begin by first of all splitting the trifle sponges in half lengthways, spread each half with butterscotch sauce, then re-form them into sandwiches. Cut each one across into three and arrange the pieces in the base of the glass bowl. Now make a few stabs in the sponges with a sharp knife and carefully pour the Madeira all over them, distributing it as evenly as you can. Then set aside to allow the sponges to soak it all up – about 20 minutes.

Now peel and slice the bananas into chunks about ¼ inch (5 mm) thick, scatter these all around the sponges, then pour the remaining butterscotch sauce as evenly as possible all over. Pour the custard in next, then cover the bowl with clingfilm and let the whole lot chill in the fridge to firm up. Meanwhile, pre-heat the grill, line the grill pan with foil and toast the pecan nuts carefully for about 4 minutes, watching them all the time, as they burn easily. After that, whip the double cream to the floppy stage, spread it all over the trifle, scatter the toasted nuts on top, re-cover and chill till needed.


What is banoffee pie?

Banoffee pie gets its name from a combination of toffee and bananas. For the toffee flavor I use dolce de leche. With the addition of cookies, it really doesn’t get any better than that. Plus, it’s a quick no-bake dessert that’s nearly effortless to make.

The amount of bananas, dulce de leche, and whipped cream is really up to you. My recipe is a classic version with what I believe to be a good balance between those three ingredients, but if you feel like adding more or less of any of them, then by all means go for it.


Boozy Banoffee Trifle

It has become a tradition (and an order from my ouma) for my husband to make his mom’s version of traditional trifle every Christmas eve. You know… instant custard, red and green jelly layered with sherry soaked sponge with lots of nuts, cherries, tinned fruit and cream? There is something so comforting about the trifle we all grew up with. To me, a trifle without something boozy laced into it is a lost opportunity. Be it sherry, kirsch, Frangelico, Amaretto and even caramel vodka, yes, vodka! I love a trifle that leaves your head spinning a little after a generous bowl.

So this year, I thought I’d pay homage to my love for caramel, bananas and all things banoffee. Why not a Banoffee trifle? Caramel Swiss roll (from Woolies of course), drizzled with caramel vodka and layered with sliced bananas, my cheat’s salted caramel sauce, toasted hazelnuts, grated dark chocolate and whipped cream. It is everything you want in a trifle and more. A boozy banoffee trifle, yes please!

Boozy Banoffee Trifle

Ingredients:
Salted Caramel Sauce
2 x tins condensed milk
50 ml golden syrup
50 g butter
125 ml cream
5 ml coarse salt

1 x ready-made caramel Swiss roll, thinly sliced into 15 pieces
60 – 80 ml caramel vodka or Frangelico
6- 8 firm bananas, thickly sliced
+- 30 ml lemon juice
100 g hazelnuts, toasted in a dry pan
50 g dark chocolate, coarsely grated
375 ml cream, whipped to firm (stiff) peaks – don’t over whip though

Method:
Start with the caramel sauce: Add the butter and golden syrup to a medium heavy based pot and allow to melt together over moderate heat. Add the condensed milk and stir until well combined. Reduce the heat to a low temperature and bring the mixture to a gentle simmer until it reduces to a viscous caramel – this shouldn’t take longer than 30-40 minutes. Stir with a wooden spoon ever so often to prevent possible catching. Now add the cream and heat through for +- 5 minutes, whisking all the while making sure it has incorporated into the caramel. Remove from the heat and add the salt. Allow to cool to room temperature before layering the trifle.
Place the sliced bananas in a container and combine with lemon juice, this will prevent enzymatic oxidation (browning) and will also add a pleasant tartness to the trifle.
Arrange 5 slices of Swiss roll on the base of a 20 cm trifle dish. Drizzle with a third of the caramel vodka.
Top with half of the sliced bananas and some hazelnuts and grated chocolate.
Now drizzle a third of the salted caramel and repeat the process one more time.
End off with a layer of Swiss roll slices drizzled with vodka and caramel.
