In a bowl we put flour mixed with baking powder, sugar, cocoa, salt, yolk and cold butter and with our fingers we start to homogenize to obtain crumbs (we will not have a homogeneous dough, and rather similar to breadcrumbs)
I mixed the cheese well with the sugar and grated orange peel (optional) until it became creamy, then I added the yolks and I continued to mix until they were well blended.
Separately I mixed the egg whites with the salt powder until it hardened and I obtained a hard foam, and I gradually incorporated them in the cheese.
The assembly follows:
Divide the dough into two equal parts.
In a tray lined with baking paper, spread a part of the dough evenly. We need a 20x30 tray
Spread the cream cheese evenly and cover with the remaining dough.
Put the cake in the preheated oven for about 40 minutes.
